RECIPE FROM "SANDY'S
(This side dish is especially good with chicken or pork)
2 medium zucchini, sliced
1-1/2 tablespoons olive oil
1- 1/2 teaspoons garlic, minced
1/2 cup onion, sliced
1 cup tomatoes, diced
1 1/2 tablespoons basil, fresh, chopped
Salt and pepper to taste
1 cup parmesan, grated
Heat the oil in a heavy skillet. A
dd the zucchini, onion, and garlic. Cook until just soft.
Toss in the tomatoes and basil. Cook for 2 minutes. Check the seasonings.
Remove from the heat and sprinkle on the cheese.
