RECIPE FROM "SANDY'S
Yummy Mashed Potatoes
5 large potatoes, peeled and diced
1/4 cup milk
1/2 teaspoon seasoned salt
3 tablespoons margarine
1 cup sour cream
1 (3-ounce) package cream cheese, softened
1 teaspoon dried chives
1/2 cup butter-flavored crackers, crushed
1/4 cup cheddar cheese, shredded
Cook potatoes in salted water until tender and drain.
Beat potatoes, milk, seasoned salt and 2 tablespoons margarine in a mixing bowl until fluffy.
Combine remaining tablespoon of margarine with crushed cracker crumbs and sprinkle on top of potato mixture.
Bake for 30 minutes in a preheated 350 degree oven.
Top with shredded cheese last 10 minutes of baking time.
Sandy's Note: This recipe can be prepared a day in advance and warmed up before serving, but I like it better made just before serving.
