BEST LEMON BARS

2-1/4 cups flour
1/2 cup powdered sugar
1 cup butter (at room temperature)
3-1/2 cups sugar
1 cup fresh lemon juice
4 teaspoons lemon zest
1 teaspoon baking powder
1 tablespoon flour
In a mixing bowl, sift together flour and powdered sugar. Cut butter into the flour mixture until it is crumbly. Pat into a 9 x 13-inch pan and bake at 350 until golden brown. While crust bakes, make filling.
Beat together the eggs and sugar. Add lemon juice, lemon zest, baking powder and flour. Pour filling over crust. Bake at 35 degrees until set, about 45 minutes. Cool completely. Sprinkle with powdered sugar and cut into bars.
For more of a tart flavor, reduce sugar to 3 cups.
