RECIPE FROM "SANDY'S
Waldorf-Style Chicken Salad
(Adapted from a recipe from Executive Chef Nick Sundberg)
2 cups chicken, white meat, cooked and diced
1/2 cup mayonnaise (not Miracle Whip)
1/2 teaspoon curry powder
1/2 cup McIntosh apples, peeled and diced
2 tablespoons gold raisins
1/4 cup celery, diced
2 tablespoons walnut meats, chopped
Salt and pepper to taste
Blend the curry powder into mayonnaise first, and then mix all the ingredients together.
Cover and refrigerate at least 1 hour before serving.
Makes about 3 cups
Sandy's Note: Serve on a bed of lettuce. Makes a great luncheon or brunch entree.
