Veggie Pie

1 large pie shell

Enough margarine to cover bottom of medium skillet (for sauteeing)

1 large zucchini, sliced thin

1 large yellow squash, sliced thin

1 onion, julienned

1 bell pepper, julienned

1 cup mayonnaise

1 cup grated mozzarella cheese

1 large tomato, sliced

1/2 cup flour

1/4 teaspoon garlic salt

1/4 teaspoon pepper

1/2 teaspoon Italian Seasoning

1/2 teaspoon basil



Bake pie shell for 12 to 15 minutes.

In skillet, saute all veggies in margarine until crisp. Remove from skillet and blot on paper towel.

Slice tomato and roll in seasoned flour (garlic salt, pepper, Italian Seasoning, basil, and any other seasonings you like). Layer tomato slices on bottom of pre-baked pie shell. Add veggie mixture, mayonnaise, and grated cheese.

Bake at 350 degreess till golden brown. 15 to 18 minutes.

Let cool 10 minutes. Cut and enjoy.
