Turkey Soup with Dumplings
1 meaty turkey carcass
10 cup water
1 Tbsp instant chicken bouillon
1 carrot sliced (about 1/2 cup)
2 onion chopped (1 onion to make broth/stock)
4 celery stocks sliced (2 stocks to make broth/stock)
1/4 cup parsley
1 tsp salt
1 bay leaf
1 cup frozen peas
1 cup mushrooms (sliced and microwave for about 3 minutes then drained) or 1 can sliced mushrooms (drained) if preferred.
Dumplings (Make dumplings according to Bisquick package directions)
Cut up turkey carcass to fit into a large Dutch oven. In the Dutch oven combine the carcass, water, and chicken bouillon onions and celery.
Bring to a boil reduce heat cover and simmer 1 1/2 hrs. Remove turkey carcass.
When carcass is cooled enough to handle remove meat from bones, discard bones.
Return meat to cooking liquid along with carrots, onions, celery, parsley, salt, bay leaf, peas, mushrooms simmer for about 30 minutes.
Drop dumplings on top of bubbling soup.
Cover and simmer for 20 minutes (do not remove lid during this time)
