Turkey Giblet Gravy
Neck, liver, gizzard, and heart of 1 large turkey
1 teaspoon salt
6 tablespoons water
1/2 cup flour
3 cups chicken broth
Place giblets in a skillet and sprinkle with the salt. Add the water and bring to a boil. Lower the heat and simmer for 1 hour.
Discard the neck and finely chop the giblets. Melt the butter in the same skillet and lightly brown the giblets. Stir in the flour and brown. Stir in the broth and bring to a boil.
Lower the heat and simmer, stirring, for 15 minutes, or until the gravy has desired thickness or consistency.
