RECIPE FROM "SANDY'S
Tropical Chicken Salad
3 cups chopped cooked chicken
2 mangoes, chopped
4 celery stalks, sliced
1 (8-ounce) can pineapple chunks, drained
1/2 cup slivered almonds, toasted and chopped
1/2 cup Jalapeño-Lime Mayonnaise (page 53)
1/2 teaspoon salt
Stir together first 5 ingredients in a medium bowl.
Stir together mayonnaise and salt; stir into chicken mixture.
