Sweet Potato Casserole


1- 40 ounce can of sweet potatoes (sliced into 1/2 inch pieces)

1- 16 ounce can of applesauce

1 tablespoon of lemon juice

3 tablespoons of butter or margarine

1/4 cup of brown sugar (firmly packed)

1/2 teaspoon of cinnamon

1/4 teaspoon of all spice or nutmeg

1/8 teaspoon of salt

1 cup of miniature marshmallows


Preheat oven to 375 degrees.
Mix brown sugar, cinnamon, all spice or nutmeg, and salt together. Set aside.
In large casserole dish, put half of sweet potatoes on bottom of dish.
Spread half of applesauce on top of potatoes.
Then, sprinkle half of lemon juice on top of applesauce.
Then dot with half of butter or margarine.
After that, sprinkle with half of brown sugar-spice mixture.
Repeat in same order until you end up with brown sugar-spice mixture.
Bake covered for 30 minutes.
Remove lid, and sprinkle marshmallows on top.
Bake uncovered for 25 minutes.
Remove and serve hot.
