RECIPE FROM "SANDY'S
Sweet and Sour Stir Fry
1 tablespoon sesame oil
1 pound chicken, cubed
1 (16-ounce) bag frozen vegetables of your choice
1 clove garlic, minced
3 cups white rice, cooked according to package directions
Sweet and Sour Sauce (see recipe below)
Almonds for garnish
In a large skillet, heat oil on high until it begins to smoke. Reduce to medium and add chicken; stir-fry until no longer pink. Add frozen vegetables and garlic and stir-fry for another 3-4 minutes. Toss in sweet and sour sauce and serve over rice Garnish with almonds.
Sweet and Sour Sauce
1/2 cup apricot preserves
1 tablespoon vinegar
1 teaspoon garlic salt
1 teaspoon powdered ginger
1 teaspoon soy sauce
1/8 teaspoon crushed red pepper
In a small saucepan, mix together the preserves, vinegar, garlic salt, ginger, soy sauce and red pepper. Bring to boil, stirring constantly. Reduce heat to low and simmer fo 3-4 minutes.
Serve warm over chicken and rice.
