Sugared Pecan Appetizers
2 1/2 cups of unbroken pecan halves
1 1/2 cups sugar
2 Tbs. butter
1/2 cup sour cream
1/2 tsp. cinnamon
1 tsp. vanilla
Toast pecans for 20 minutes in a 275 degree oven. Cool.
In a heavy saucepan, mix together sugar, butter, sour cream. Boil to the soft-ball stage (or use a candy thermometer). As soon as it reaches the soft-ball stage, remove from heat.
Add the cinnamon, vanilla and toasted pecans to the cooked sugar mixture and mix thoroughly.
Separate coated pecans on wax paper and allow to set and cool.
