RECIPE FROM "SANDY'S
Spicy Hawaiian Chicken
4 boneless, skinless chicken breasts
1 tablespoon vegetable oil
3/4 cup chopped sweet red onion
1 cup chopped green bell pepper
1/2 cup chopped red bell pepper (reserved for garnish)
1 large garlic clove, minced
1/4 teaspoon red pepper flakes
1 can (10-3/4-ounce) cream of chcken soup PLUS 1/2 can water
1 can (8 ounces) pineapple chunks, undrained
2 tablespoons honey Dijon salad dressing
Rinse chicken with cold water and pat dry with paper towels. Cut into bite-sized pieces.
Heat oil in large Dutch oven. Add chicken and cook for 4 to 5 minutes per side or until done. Stir in onion, bell pepper and garlic. Cook over medium-high heat for 3 minutes or until onion is tender. Stir in red pepper flakes, soup, wter, pineapple and juice, and salad dressing.
Cook, covered ,over medium heat for 10 minutes or until heated thoroughly.
Serve with rice and garnish with chopped red bell pepper.
