Southern Bean Soup

Ingredients

1 pound navy beans

Water

Ham hock (smoked and meaty)

3 medium potatoes, cut in small cubes

1 cup chopped onion

1 cup chopped celery

2 cloves elephant garlic

1/2 teaspoon garlic powder

Salt and pepper

Directions

Wash beans thoroughly and soak overnight in enough water to cover. The next morning, add enough water to make 5 quarts. Add ham hock and simmer for about 2 hours or until beans reach the mushy stage. Add potatoes, onion, celery and garlic; simmer for 1 hour. Remove ham hock and add meat from the bone to the soup.

Season to taste with salt and pepper.

Yield: about 4 to 4-1/2 quarts.
