Southern-Style Slow Cooked Green Beans
(The perfect side dish (with mashed potatoes) for fried chicken.)

Ingredients

1 pound fresh green beans

6 strips bacon

1 large onion, diced

2 cups chicken broth

Fresh ground pepper to taste

Directions

"String" (remove the very tip of the bean and pull out the tough string along each side) and "snap" (break into one-inch pieces) the beans. Set aside. In a medium pot, cook bacon until just brown. Remove and set aside. Over medium heat, add onion to warm bacon grease and cook until soft. Add beans and stir for two minutes. Add broth and pepper. Dice bacon and add. Reduce the heat and simmer until the beans are very soft (at least one hour).

Serves 4
