RECIPE FROM "SANDY'S
South of the Border Chicken Casserole

1/2 cup of small curd cottage cheese
3 ounces cream cheese
1 cup of sour cream
1 small can Cream of Chicken Soup
1/2 teaspoon salt
1/8 teaspoon garlic powder
4 oz chopped green chilies
3 cups chopped boiled chicken
3 cups of cooked Rice
3/4 cup of shredded cheddar cheese
3/4 cup of Monterey Jack Cheese
2 Large tomatoes, chopped in large pieces
1/2 cup of chopped black olives
1 cup coarsley crushed corn chips
Blend together cottage cheese, cream cheese and sour cream; add Cream of Chicken Soup, salt, garlic powder, green chilies, chicken, rice, cheeses, tomatoes and black olives.
Spray a 9 x 13" pan with non-stick spray and pour combined ingredients into pan.
Top with corn chips and bake at 350 degrees for 30 minutes.
