RECIPE FROM "SANDY'S
Skillet Meat Loaf
(Easy, Fast, and Delicious!)
1 pound ground beef
1/3 cup mushrooms, finely chopped (optional)
1/2 cup stuffing mix
1 small onion, finely chopped
1 can (10 3/4 ounces) condensed tomato soup, divided
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon garlic powder
1 tablespoon vegetable oil
1/4 cup water
1/2 teaspoon Italian seasoning
In a large bowl, combine the beef, stuffing mix, mushrooms, onion, egg, 1/4 cup tomato soup, and the salt, pepper, and garlic powder; mix well. Shape into four oval patties about 1/2 inch thick.
Heat the oil in a medium skillet over medium heat. Add the patties and brown on both sides; drain off all grease.
Stir the water and Italian seasoning into the remaining soup and pour over the browned patties.
Reduce the heat to medium-low, cover, and cook for 15 to 20 minutes, or until no pink remains in the beef, stirring the sauce occasionally.
Note: This is delicious with mashed potatoes, topped with the tomatoey sauce from the skillet.
