Sandy's Summer Veggie Salad

Ingredients

1 package frozen California vegetables

1 can red kidney beans, drained

1/2 cup chopped celery

1/2 cup chopped sweet Vidalia onion

1/4 cup chopped green bell pepper

1/4 cup chopped red bell pepper

1/2 cup frozen peas

3/4 cup sugar

1/4 teaspoon garlic powder

1/4 cup balsamic vinegar

1/4 cup cider vinegar

1 Tbsp cornstarch

 

Directions

Cook frozen vegetables until just crisp and tender. Drain and transfer to a large bowl. Cool.

Add kidney beans, and all chopped vegetables. Add frozen peas last.

In saucepan, bring sugar, garlic powder, vinegar and cornstarch to boil, stirring constantly, untl thick.

Cool slightly. Pour over vegetables and toss.

Refrigerate and serve chilled.
