Sandy's Strawberry Pie


1 cup water

3/4 cup sugar

2 tablespoons PLUS 2 teaspoons cornstarch

1/4 cup strawberry jello

2-1/2 cups fresh strawberries

1/2 large package cream cheese (you will use only half of it)1/4 cup powdered sugar

1 tablespoon lemon juice

1 graham cracker crust

1 carton Cool Whip or Dream Whip



In a medium saucepan, stir together water, granulated sugar, and cornstarch. Cook until thickened. Add jello and stir until completely dissolved. Cool slightly.

Wash and clean strawberries, cut up, and add to thickened mixture in saucepan. Blend and set aside.

Combine softened cream cheese with the powdered sugar and lemon juice. Evenly spread this on top of the graham cracker crust. Then add the strawberry mixture on top of that.

Refrigerate for approximately 3 hours, or until well set.

Before serving, top pie with Cool Whip or Dream Whip (made according to Dream Whip package directions).

Suggestion: Since you will have left-over jello and cream cheese, make two pies and make twice as many people happy!!!!
