RECIPE FROM "SANDY'S
Sandy's Ranch Potato Salad
6 medium potatoes, cooked, peeled and slied
1/2 cup finely chopped celery
1/4 cup sliced green onions and tops
2 tablespoons chopped parsley
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon garlic powder
1 tablespoon Dijon mustard
1 cup prepared Ranch Salad Dressing
2 medium tomatoes, seeded and chopped
2 hard cooked eggs, finely chopped
Combine potatoes, celery, onions, parsley, ssalt, pepper, and garlic powder, in a large bowl.
Stir mustard into salad dressing in a small bowl.
Pour over potatoes, toss lightly to coat.
Cover and refrigerate several hours.
Before serving, stir in chopped seeded tomatoes and sprinkle eggs over top.
Note: This is a delicious alternative to traditional potato salad.
