RECIPE FROM "SANDY'S
Sandy's Potato Casserole
2 large Idaho potatoes, peeled and sliced 1/4-inch thick
1/2 stick butter
1 large onion, diced
1 small red bell pepper, diced
1-1/2 teaspoon garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Cheddar cheese
2 teaspoons parsley, chopped
Pre-heat the oven to 400.
Heat the butter in a skillet. Add the onion and bell pepper and cook until soft. Add the garlic and cook for 2 minutes longer.
Lightly oil a medium casserole dish. Layer in the sliced potatoes. Pour the sauteed mixture over the potatoes and sprinkle with salt and pepper.
Cover and bake for 1 hour (or until the potatoes are tender).
Sprinkle potatoes with shredded Cheddar cheese and return to oven just until cheese melts.
Serve warm, garnished with parsley.
