RECIPE FROM "SANDY'S
Sandy's Molded Fresh Veggie Salad
(This is a very old recipe that I've always loved. It would be great for a summer luncheon)
1 (3-ounce) package Lemon Jello
2 bouillon cubes
1/2 teaspoon salt
1 cup boiling water
2 tqablespoons tarragon vinegar
Dash of pepper
1 cup sour cream
1/2 cup thinly diced celery
1/3 cup thinly sliced radishes
1/3 cup cucumber, seeded and diced
1/4 cup green and yellow thinly sliced (1-1/2" length) bell pepper strips
1/4 cup thinly sliced scallions (include green tops also)
Dissolve jello, bouillon cubes, and salt in boiling water.
Add vinegar and pepper.
Chill until slightly thickened.
Blend in sour cream and add all remaining ingredients. Mix well.
Pour into a 3-cup mold.
Chill until firm (about 4-5 hours)
Carefully unmold upside down on chilled plate covered with Bibb lettuce leaves.
Serve with mayonnaise or French dressing on the side.
