RECIPE FROM "SANDY'S
Sandy's Ham and Noodle Casserole
8 ounces noodles
1-1/2 cups celery, finely chopped
1/2 cup red bell pepper, finely chopped
1/2 cup onion, finely chopped
1/8 cup butter
1 cup grated Cheddar cheese (reserve 1/4 cup for top of casserole)
8 ounces cream cheese
1 cup milk
1 large clove garlic, minced
2 cups chopped ham
1 cup fresh mushrooms, thinly sliced
Cook noodles, rinse, and drain
Saute celery, bell pepper, and onion in butter until tender.
In a large mixing bowl, mix Cheddar cheese, cream cheese, milk, and garlic, until smooth.
Gently stir in the celery, bell pepper, onion, ham, and noodles. Blend well.
Pour into a 2-quart casserole dish and sprinkle 1/4 cup grated Cheddar cheese over top.
Bake for 35 minutes.
