Sandy's Grilled Sweet and Sour Pork Chops

4 (1" to 1-1/4" thick) pork chops

Ingredients for Marinade and Sauce

1/4 cup butter or margarine

1/4 cup cornstarch

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 cup vinegar

3 cups pineapple juice

1/2 teaspoon garlic salt

1 teaspoon Liquid Smoke

3 cups 7-Up

1/4 cup crushed pineapple

1/4 cup chopped green pepper

1/4 cup chopped onion

1 cup brown sugar

Directions for Marinade and Sauce

In a saucepan, combine first 8 ingredients.

Cook over low heat until clear and thickened, stirring constantly.

Remove 1 cup of sauce from the saucepan and to that, add 3 cups of Seven-Up. Mix well. This is the marinade for the porkchops.

Poke holes in pork chops with ice pick or fork and place chops in a large bowl. Pour marinade over them, cover tightly, and chill several hours in the marinade. (Discard marinade when porkchops are removed. It is no longer usable.)

In the meantime, add 1/4 cup crushed pineapple, 1/4 cup chopped green pepper, and 1/4 cup chopped onion, to the remaining sauce in the saucepan, and simmer for 3-4 minutes.

Grill marinated chops over medium-hot charcoal fire for 10-12 minutes per side, or until cooked half through. Turn chops only once. They are done with center appears light gray color.

Baste chops with sweet and sour sauce the last four or five minutes of the broiling time.

Heat the remaining sweet and sour sauce and serve hot with the chops.

Sandy's Note: This is a very old recipe I've used for many, many years. It is excellent!
