Sandy's Corn Relish
3/4 cup thawed frozen corn
1/4 cup finely diced green bell pepper
1/4 cup finely chopped red onion
1 tablespoon vegetable oil
2 tablespoons seasoned (sweet) rice vinegar
Salt and Pepper to taste
1/8 teaspoon garlic powder
1 teaspoon sugar
2 medium tomatoes, seeded and finely chopped
Toss together corn, bell pepper, onion, oil and vinegar in a medium bowl.
Season with salt, pepper, garlic powder, and sugar.
Cover and refrigerate until ready to serve.
Just before serving, gently mix in tomatoes.
Makes about 1-1/2 cups
