RECIPE FROM "SANDY'S
Sandy's Corn Fritters
1 cup flour
2 eggs, beaten
1/2 cup buttermilk
1 teaspoon vegetable oil
1 (16 ounce) can whole-kernal corn
1 teaspoon sugar
Preheat oil in deep fryer to 375 degrees.
In a mixing bowl, combine all ingredients and mix well.
Spoon batter into the hot oil and fry. Watch closely and turn fritters when they are brown and crispy on one side.
When fritters are done, remove from oil and drain on paper towels. Keep warm in 200 degree oven until all fritters are done.
Serve warm with butter.
