Sandy's Chicken Casserole


3 cups diced, cooked chicken (or turkey)

8 ounces of spinach noodles, cooked according to package directions

2 tablespoons finely chopped red bell pepper

1/2 cup finely chopped Vidalia onion (or other sweet variety)

1 cup thinly sliced celery

3 tablespoons butter

1 can sliced water chestnuts

1 (4-ounce) can sliced mushrooms

1 can Cream of Chicken soup

1/2 cup milk

2 tablespoons sherry

1/4 teaspoon dill weed

1/4 teaspoon garlic powder

1 roll garlic crumbled cheese (If you can't find garlic cheese, substitute 8-ounces shredded [medium] Cheddar cheese and add an additional 1/4 teaspoon garlic powder)

1 (4-ounce) can sliced ripe olives

1 cup crushed potato chips


Saute green pepper, onion, and celery in butter. Add water chestnuts, mushrooms, soup, milk, sherry, dill weed, garlic powder, garlic cheese, and half of the olives. Add cooked noodles and chicken. Mix well. Top with remaining olives mixed with potato chips

Bake at 350 degrees for 45 minutes or until bubbly and light brown.
