Sandy's Cheesy Corn Quesadilla Bites
4 flour tortillas
1 can refried beans
1 can whole kernel Mexican corn, drained
1-1/2 cups shredded Monterey Jack, Swiss, or Cheddar cheese
1 small onion, diced
2 medium tomatoes, seeded and diced
Preheat oven to 350°F.
Lightly grease a jelly roll pan or cookie sheet.
Spread each tortilla with refried beans and sprinkle each with corn, cheese, onion, and tomatoes.
Fold tortilla in half and place on cookie sheet. Bake about 5 minutes.
Carefully flip tortilla over, and bake another 5 minutes. The cheese inside tortilla should be melted.
Cut each tortilla into 4 wedges to serve.
Serve with salsa, sour cream, and guacamole.
Yields: 16 appetizers
