1/2 pound lean bacon
1/2 cup chopped Vidalia onion (or other sweet variety)

1 cup Hellmann's mayonnaise (do not use Miracle Whip)
1 pound processed American cheese, cubed
1/4 teaspoon garlic powder
a couple of dashes of your favorite hot sauce

Add the onion, celery, mayonnaise, cheese, garlic powder, hot sauce, and salt and pepper to the cubed potatoes.
Mix all ingredients together well.
Place mixture in a lightly oiled 9x11 inch baking dish. Top with the crumbled bacon. Bake uncovered for 40 minutes.
