RECIPE FROM "SANDY'S
Sandy's Baked Bananas
4 large bananas
1/4 cup pineapple juice
1 tablespoon honey
1/8 teaspoon nutmeg
1/4 cup brown sugar
1/4 cup soft butter
1/8 cup finely chopped pecans, toasted
In a small bowl, combine the pineapple juice, honey, and nutmeg with the juice mixture.
Slice bananas and arrange in a shallow baking dish lightly sprayed with margarine. (Or, you can dab a paper towel in margarine and wipe the baking dish with it)
Pour juice mixture over bananas, making sure all are covered.
In a small bowl, cut butter into brown sugar until mixture is crumbly. Sprinkle over top of bananas.
Bake at 300°F basting occasionally with the juice, for 25 minutes, or until the bananas are softened.
Remove from oven, sprinkle with toasted pecans, and serve warm.
