ROLL IN APRICOT SAUCE
1 (32 oz.) 'Best' (or equivalent brand) Kosher Salami Roll
1 (5.5 oz.) can of Apricot Juice
1 (12 1/4 oz.) jar Apricot Preserves
1 tsp. soy sauce
1 Tsp. brown sugar
Combine apricot juice, apricot preserves, soy sauce, and brown sugar together and stir/mix well. Mixture will be lumpy because of the preserves. Mash the large lumps to get a more even texture, and make sure the brown sugar is thoroughly dissolved.
Cut salami roll lengthwise (in half). Then cut each half lengthwise. You will now have four quarter sections of salami roll.
Cut each quarter section into 1/4" slices.
Put salami roll slices in 9 x 13" cake pan.
Pour the apricot sauce/mixture evenly over the salami pieces, making sure all are well covered before baking.
Bake at 350 degrees for 20 minutes.
Serve warm in apricot sauce.
YIELD: Approximately 100 - 125 slices
