RECIPE FROM "SANDY'S

7-8 potatoes, boiled in jackets. (We use red potatoes for this)
1 large bell pepper, chopped
1 large onion, chopped
1 small jar of chopped mushrooms
1 stick of butter, or oleo
1 can Rotel tomatoes, chopped
1 lb. Velveeta cheese, melted
Slice cooked potatoes in jackets and place in a baking dish. Sautee onions, mushrooms and peppers in butter.
Mix tomatoes and melted cheese with the sauteed onion, bell pepper, mushroom mixture.
Pour this mixture over top of potatoes. Heat 350 degrees until cheese browns.
