RECIPE FROM "SANDY'S
Roasted Onion Mashed Potatoes
2 medium Onions, peeled
1 tablespoon Olive oil
4 large Potatoes, peeled and diced
3 tablespoons Butter
1/2-3/4 cups Milk
Salt and pepper to taste
Pre-heat the oven to 350.
Toss the whole peeled onion with the oil. Place on a cookie sheet. Cook until soft (about 1 hour). Cool slightly. Puree.
Boil the potatoes until soft. Drain. Place in a mixer bowl. Add the butter, milk and pureed onions. Add milk as needed. Adjust seasonings to personal taste. Serve warm.
Sandy's Note: A great side dish to serve with beef or pork.
