RECIPE FROM "SANDY'S
(From Cooking of the American South)
1 (10 pound) goose
1/2 pound pitted prunes
1-1/2 cups apple cider
5 apples, cored, peeled and sliced
1/2 cup slivered almonds
1 teaspoon grated orange rind
2 plums, seeded and chopped
Soak the prunes in the cider overnight.
Preheat oven to 350 degrees.
Rinse goose inside and out and pat dry.
Drain the prunes and reserve the cider.
Mix the prunes with the apples, almonds, orange rind and plums and stuff the goose.
Close and secure the cavity with stuffing "nails".
Bake in a large roasting pan for 3 hours, basting with the cider every 15 minutes.
