RECIPE FROM "SANDY'S
Roast Garlic Whipped Potatoes
1 head Garlic
4 large Potatoes, peeled and diced
3 Tablespoons Butter
1/2 cup (or more) Milk
Salt and pepper to taste
Pre-heat the oven to 350. Place the whole garlic bulb in an ovenproof dish. Add water to cover the garlic 2/3 of the way. Bake until soft (about one hour). Remove the garlic from its skin. Set aside.
Cook the potatoes in water until soft. Place in a mixer bowl. Add the butter and garlic. Add a little of the milk. Turn on the mixer, adding milk as needed. Whip until light and fluffy. Season.
