RED CANDIED APPLES
1 1/2 cups sugar
1 cup water
1/2 cup cinnamon red hots
1/2 teaspoon red food coloring
6 to 8 cooking apples
1 (3-ounce) packages cream cheese, softened
Finely chopped pecans
Mix sugar and water in medium-sized pan.
Add cinnamon candies and coloring.
Simmer until candies are dissolved.
Peel and core apples and add whole apples to simmering mixture. Turn frequently.
Cook until aples are just tender. Cool. Refrigerate.
Combine cream cheese with a little mayonnaise and milk for a good stuffing consistency, and add a few finely chopped pecans.
Stuff apples with the cheese mixture. Or, if you prefer, the apples can be cut into rings before cooking and served as rings with cheese stuffing in the center.
Note: These may be made several days ahead.
