RECIPE FROM "SANDY'S
1/2 cup butter or margarine, softened.
1/2 cup white or brown sugar
1/2 cup cooked pumpkin
1 teaspoon vanilla
1 cup unsifted flour - can use whole grain.
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon allspice
1/2 cup chopped nuts (optional)
Preheat oven to 350 degrees.
In mixing bowl, cream butter and sugar. Beat in egg, pumpkin and vanilla.
Stir in remaining ingredients just until well combined.
Drop by rounded teaspoonfuls, 2 inches apart, onto lightly greased baking sheets.
Bake 12 to 15 minutes, or until center is set.
Makes 2-1/2 dozen cookies; recipe can easily be doubled or tripled.
