RECIPE FROM "SANDY'S
4 portobello mushrooms
1 cup canola oil
1/4 cup balsamic vinegar
1/4 cup soy sauce
2 tablespoons minced garlic
1 tablespoon minced shallot (or green onions)
2 tablespoons chopped thyme
Pinch of salt and pepper
Cut the stems of the portobello mushrooms off so that the caps are flat.
Mix all ingredients together and pour over mushrooms and the stems.
Let marinate for at least 1 hour (longer is better).
Place in a roasting pan with a rack and bake at 300 degrees for 55 min to 1 hour.
