Pico de Gallo

Ingredients

2 large tomatoes (finely chopped)

1 medium onion (finely chopped)

1/2 cup cilantro leaves (finely chopped)

1 to 2 serrano (jalapeno) peppers, seeded and very finely diced

1 medium orange bell pepper (finely chopped)

1 elephant garlic clove (very finely diced)

Juice of 1/2 lime

1 teaspoon salt

2 avacados, finely chopped (optional)

Directions

Combine all ingredients together in mixing bowl except avacados. Mix well and chill for 6 hours. Just before serving, peel, chop, and add avacados to mixture.

Note: I love the addition of avacados, but it is merely a matter of personal preference. Sometimes, I also add a tablespoon of mild picante sauce to the mixture Serve with chips and/or Mexican food,
