Ozark Chicken Casserole
(From Southern U.S. Cuisine), The Recipe Hall of Fame Cookbook: Winning Recipes from Hometown America
2 cups cooked diced chicken
1 cup cooked rice
1 tablespoon lemon juice
1 cup chopped celery
1 medium onion, chopped
1/2 cup mayonnaise
3 hard-boiled eggs, chopped
1 can cream of chicken soup
salt and pepper, to taste
1/2 stick butter, melted (2 ounces)
2 cups Pepperidge Farms Herb-Seasoned Stuffing Mix
Combine chicken, rice, juice, celery, onion, mayonnaise, eggs, soup and seasoning thoroughly and place in greased casserole.
Mix butter and stuffing and sprinkle on top.
Bake at 350° for about 30 minutes.
