RECIPE FROM "SANDY'S
One-Dish Chicken and Rice
1 (16 ounce) package yellow rice dinner
1 (3-1/2 pound) package frozen chicken pieces
3 tablespoons vegetable oil
1 large onion, diced
1/2 green bell pepper, diced
1 medium tomato, seeded and diced
1 (14-1/2 ounce) can chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/8 teaspoon ground red pepper
1 (8-1/2 ounce) can sweet green peas, drained
Cook rice according to package directions and set aside.
In a Dutch oven over medium-high heat, in two batches, brown chicken for five minutes each batch. Remove chicken and drain on paper towels.
Saute onion, bell pepper and tomato in Dutch oven for 10 minutes.
Add chicken pieces, broth and next 4 ingredients. Cover, reduce heat and simmer 30 minutes. Stir in rice and peas; cover, reduce heat to low and simmer for 20 minutes.
