Old Fashioned Soft Pumpkin Cookies


2-1/2 cupsflour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup butter
1-1/2 cup sugar
1 cup canned pumpkin (I prefer Libby)
1 egg
1 teaspoon vanilla extract
Glaze (recipe follows Directions)


Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt, in a medium bowl.
In a large bowl, cream butter and sugar.
Add pumpkin, egg, and vanilla; beat until light and creamy.
Mix in dry ingredients until well blended.
Drop by rounded spoon onto greased cookie sheet.
Bake in preheated 350F degree oven for 15-20 minutes.
Cool on wire rack. Drizzle glaze over top.

Makes approximately 3 dozen

Glaze Recipe

Combine 2 cups sifted powdered sugar, 3 tablespoons milk,
1 Tablespoon melted butter and 1 teaspoon vanilla in a small bowl until smooth.
Optional: Chopped pecans to lightly sprinkle over the glaze

Note: For variations stir any one of the following ingredients into cookie batter: 1 cup raisins, chopped nuts, or rolled oats, chocolate chips and/or 1/2 cup crushed pineapple; drained.
