Nina's Chicken Salad Spread
(This recipe is from my friend, Nina, in Norway)


1 (5-ounce) can of white boned chicken meat, drained

1/3 cup mayonnaise

1 green onion chopped

1/4 cup grated carrots

2 tablespoons green bell pepper, chopped

1 tablespoon Worcestershire sauce

garlic salt to taste

black pepper to taste



In a small bowl, combine chicken, mayonnaise, green onion, carrots, green pepper and Worcestershire sauce.

Season to taste with garlic salt & black pepper.

Cover and chill.

Serving Ideas: Cut out the stem of a nice big tomato. Slice it in quarters from the top, but not cutting clear though the bottom skin, then set the tomato on a big leaf of lettuce, spoon chicken salad into the center of tomato, sprinkle with paprika.

Spread on snack crackers.

Spread on 2 slices of your favorite bread.

Top a nice green salad with 2 tablespoon of chicken salad.

On the Lighter Side:

Substitute Light or No-Fat Mayonnaise

Garlic Powder

Boiled, skinless, boneless

Chicken breasts, diced
