Mushroom Gravy

Ingredients

1 medium onion, minced

3 garlic cloves, minced

2 tablespoons olive oil

1 (8-ounce) package sliced fresh mushrooms

1 (100-1/2 ounce) can beef broth, undiluted

1 tablespoon soy sauce

2 tablespoons cornstarch

3/4 cup wter

1/4 teaspoon salt

1/2 teaspoon pepper

Directions

Saute onion and garlic in hot oil in a medium saucepan over medium-high heat until tender; add mushrooms and saute 5 minutes.

Stir in beef broth and soy sauce. Stir together cornstarch with 3/4 cup water; gradually stir it into the broth mixture. Bring to a boil over medium heat, stirring constantly; boil, stirring constantly, for 1 minute.

Stir in salt and pepper. Serve gravy over meat or mashed potatoes.

Yield: 3 cups
