RECIPE FROM "SANDY'S
Louiville Benedictine (Spread)
1 medium cucumber, peeled, seeded, and chopped
1 cup packed watercress or spinach
2 tablespoons minced onion
8 ozs. Cream cheese, softened
1 tablespoon Durkee's sauce or mayonnaise
8 slices soft white sandwich bread
6 crisp cooked bacon slices, crumbled
Thin sliced onion rings
Combine in a food processor the cucumber, watercress, and onion, and puree.
Add the cream cheese, Durkee's and Tabasco to taste and combine thoroughly.
Refrigerate covered for at least an hour to let the flavors develop.
Slather half of the bread with the spread and top with bacon and onion rings.
Top with remaining bread.
Slice into pieces and serve.
