RECIPE FROM "SANDY'S
Lemon Pudding Cake
This is one of my favorite cakes from childhood.
1 box Duncan Hines lemon cake mix
1 (small) box instant lemon pudding
1/4 teaspoon lemon extract
3/4 cup Wesson oil
3/4 cup water
Powdered sugar for top of cake (optional)
1 1/2 cups powdered sugar
2 tablespoons lemon juice
2 teaspoons melted butter
2 teaspoons water
Preheat oven to 350 degrees.
Thoroughly beat cake mix with the remaining 5 ingredients for 5 minutes.
Bake for 35 to 40 minutes in a 13 x 9 inch cake pan.
When cake is done, remove from oven and prick holes in top of cake with a fork.
Spread glaze onto cake while cake is still warm so it will absorb the glaze.
Sprinkle powdered sugar on top of cake if desired.
