RECIPE FROM "SANDY'S
Lemon Butter Cookies
2 cups butter, softened
1 cup powdered sugar
3 cups all-purpose flour
1 teaspoon lemon extract
1 teaspoon grated lemon rind (optional)
BEAT butter until creamy; gradually add powdered sugar, beating well. Add flour, 1 cup at a time, beating well after each addition. Stir in extract and, if desired, rind.
FORM dough into desired shapes using a cookie press, and place onto parchment paper-lined baking sheets.
BAKE at 325° for 12 to 15 minutes per batch. Cool on wire racks.
Yield: 8 dozen.
