RECIPE FROM "SANDY'S
Layered Corned Beef and Sauerkraut
1/4 to 1 pound cooked corned beef, sliced
5 medium carrots, peeled and thinly sliced
1 medium onion, sliced
5 medium potatoes, peeled and sliced
1/2 teaspoon caraway seeds
1 (15 to 16-ounce) can sauerkraut, drained
1 tablespoon sweet-hot mustard
1 (10-1/2 ounce) can condensed chicken broth
Preheat oven to 375 degrees.
Grease a 13 x 9-inch baking dish.
Arrange the corned beef un the prepared dish. Top with carrots, then onion, potatoes, and caraway seeds.
Spread sauerkraut over the top.
Stir the mustard into the chicken broth and pour over thge sauerkraut.
Cover and bake 1-1/4 hours or until the potatoes and carrots are tender.
