Kielbasa & Cabbage Soup

Ingredients

1 Tbsp margarine or butter

2 1/2 cups cabbage - shredded

1/2 cup carrots - shredded

1 medium onion - coarsely chopped

1 stalk celery - sliced

1/2 tsp caraway seed

12 oz pre-cooked kielbasa - quartered lengthwise, cut into 1/2-inch slices

3 cups frozen hash brown potatoes

2 (14 1/2 oz) cans ready-to-serve chicken broth

1/4 tsp coarse ground black pepper

Directions

Melt margarine in Dutch oven over medium heat. Add cabbage,

carrots, onion, celery, and caraway seed. Cook 2 - 3 minutes or

until vegetables are crisp-tender; stirring frequently. Add all

remaining ingredients; mix well. Bring to boil. Reduce heat;

cover and simmer 5 - 10 minutes or until potatoes are tender and

soup is thoroughly heated, stirring occasionally.

Makes 5 (1 1/2 cup) servings.
