Hearty Vegetable Chowder

Ingredients

4 strips bacon, diced

1 medium onion, diced

2 stalks celery, diced

1 teaspoon diced bottled garlic

1 tablespoon flour

4 cups chicken broth

2 medium potatoes, peeled and sliced

1 cup whole kernal corn

1 cup tomatoes, diced

2 cups milk

1/4 teaspoon thyme

Dash of hot sauce (Tabasco or Louisianne)

Salt and pepper to taste

Directions

Brown the bacon pieces in a heavy soup pot. Add the onions, celery, and garlic. Cook until just soft. Sprinkle on the flour and cook for 3 minutes. Whisk in the broth. Slowly bring to a boil. Add the potatoes, corn, thyme, hot sauce, and tomatoes. Simmer until the potatoes are soft (about 25 minutes). Stir in the milk and simmer 20 minutes longer. Serve warm.
