RECIPE FROM "SANDY'S
Ham and Veggie Frittata
1 bag (16 oz) your favorite frozen mixed vegetables (i.e., broccoli, corn and red peppers)
6 large eggs
8 oz sliced baked Virginia ham
1 tablespoon vegetable oil
3/4 cup shredded Cheddar cheese
Crusty French or Italian bread
Bring 1/3 cup water to a boil in a covered large nonstick skillet.
Add frozen vegetables to skillet, cover and cook over high heat 3 minutes.
While veggies are cooking, whisk eggs in a bowl,.
Stack pieces of sliced ham and cut into narrow strips.
Remove veggies from skillet, drain in colander, and wipe skillet dry.
Heat oil in skillet, add whisked eggs and sprinkle with ham, vegetables and cheese. Cover and cook over medium-low heat 6 minutes or until eggs are set on the bottom, but still slightly wet on the top.
Broil 4 to 5 inches from heat source for 1 to 2 minutes (until top is set and golden). Slide onto serving plate, cut in wedges and serve with bread.
